Wouldn't work. WoD Vampires don't just drink blood because of it's biochemical properties. They drink it as much or even more so for it's symbolical and metaphysical properties. A generous ST might rule that coconut water is to animal blood what animal blood is to human blood. Then you might have a vampire "living" on it, but it would require huge amounts and the vampire would be always hungry.
