The Phalanx was not flexible. It was slow to prepare for battle, slow moving forward, almost impossible to move backwards with it, being attacked from the side or back almost always broke them, if cohesion was lost it would almost always not return due to the difficulty in setting it up, and only the most well trained could turn around and do the fancy things you mentioned.
Phillip lost because his phalanx took too much time to set up, and when attacked, lost cohesion and couldn't get it back. This exposed the flanks of his other, winning phalanx and upon being attacked from the back, immediatly caused a mass rout. All of these factors are due to the phalanx inherent weaknesses.
Had his other flank being able to set up properly before being attacked, he might've won. Maybe the elephants would have broken through the phalanx anyways, regardless.
You are right in regards to numbers, but not quite the way you think. Napoleon once expressed that superior tactics were simply "attacking a spot in the enemies armies were he is outnumbered" so a smaller army with superior tactics could win by taking engagements where it would have numbers superiority. I remember reading in a book, I can't remember which, maybe it was "Outliers" that showed the data from wars between nations, one having a greater number of soldiers. If fought normally, the number advantage did not guaranteed victory as often as one would think, and if the smaller country used guerrila tactics instead, the bigger country was more likely to lose than to win.
This discussion makes me want to play Rome 2 total war. God that game was shit at release.

Someone once said, that you always have to leave a open and free way for the enemies to leave, otherwise they will fight to the death, and each men in this situation is worth 3 or more men, which is fucking dangerous. Just - don't waste your men on them. Meaning, if you are outnumbered and have no way to escape, might as well take as many enemies as you can with you!

I know it was him but I was afraid of misquoting him. And he is absolutely right in this matter, I tested it multiple times. Anyone in a corner is far more dangerous than normal.
