The stability is what I like real much. The bugs... I feel like an entomologist...
The mods will be amazing, I am sure. iNeed and Frostfall with new and bettered difficulty, Campfire on top of that...

Black Friday discounts on Steam, grab them before it's over! I finally got my original Skyrim =) and I plan on getting all the DLCs as well!

Do you have the old 32 bit Skyrim or the new 64 bit special edition?
Many of the really good mods for Skyrim require the Skyrim Script Extender (SKSE) to work, but SKSE was made for the old 32 bit Skyrim. The SKSE is working on a SKSE64 for the special edition, but it's not done yet. Which basically means many essential mods (Such as SkyUI) don't work with the special edition.
On my end, I've recently been playing Morrowind again thanks to OpenMW. I started out with a very lightly modded game (Real Signposts, all the LGNPC mods I could find, and then latter Better Heads and Better Bodies), but I found I'm going to have to throw in a character leveling mod too because the attribute multiplier system sucks.

The most important mod I can recommend is an experience mod. There's SkyXP and Skyrim Experience Mod, all are slightly buggy but do the job. The game is infinitely more fun when I don't have to worry about making 500 daggers so I can level up my smithing, casting and recasting buff spells while running away from an enemy to get the xp, or autorunning while sneaking in front of a wall to get sneak points.
All I have to worry about is playing the fun parts of the game
If you haven't tried yet, I recommend give Requiem a go at least once. It's a complete overhaul mod that makes the game much more lika an unleveled RPG. It's a bitch to get it going though.
The Populated Series is awesome, but I only use Populated Roads since anything else makes my pc crash Expanded Towns and Cities make the villages in the game (not the main cities) feel more alive.
A perk overhaul mod also makes the game much more fun and each build feels more unique. I use Ordinator since I'm not using Requiem and it doesn't require much hassle to get it going. Requiem's perk system is better, but I'm not playing with Requiem atm.

Grinding skills is entirely optional and there's always training.
I'd recommend playing the game unmodded first, in order to learn what that's like and what you want to change (the UI will probably be #1 on that list, check out SkyUI if you have the old version of the game). Only then would I recommend piling on mods. Also, limit yourself to only one of the three crafting skills (Alchemy, Enchanting, Smithing) or else the game is going to get pathetically easy.

If we are discussing Mods, it stands to reason that the console is available anyways. Unless raising the XP required for level-ups, or changing how experience interacts with the level system, these mods are pointless.

I'm assuming they make it so you no longer increase skills by using them, but instead get XP for killing things and completing quests and then when you level up you get a number of points and decide which skill to put them in.

It's not a cheat mod, you silly. Draggy got it kinda right.
You do stuff in the world to get xp, spend that xp to level up the skill you want.

I beat the game! Finally! I had a pirate version before, it would self-lock when talking to Esbern. With the original and updated version (+Hearthfire), I finally managed to beat the game!
It was DISAPPOINTING.
But I enjoyed, neverthless. Now I am building my own manor at Morthal, next will be Falkreach and finally Dullstar.

Pro tip: in your Manors you could bake bread and things, not only cook. At Falkreath's Manor the oven is in the basement.

This time it was semi-hard. Not sure if it was the difficulty setting, but I had to run from enemies (shame!), and died quite a lot of times. I didn't craft as much as I did on my first playthru. At least the whole world is mine now, so I have all the time I need to craft stuff =)

On my first playthrough I thought the MQ was kind of lame until I got to Blackreach. From there on I had fun with it. Sure, it was easy, but I enjoyed the atmosphere. Sovngarde music gave me the chills. I actually walked through it instead of running. It felt more appropriate.
