Well I haven't even done Dragonborn, so, how big is that thing? Also, what's a good spell to have in my left hand if I carry a sword in right?

Any healing, alternatively Fire/Frost/Shock or Conjure Something Nasty... Muffle or Invisibility are good before shit goes down.

Either a shield or a second sword.
There are plenty of good, useful spells in the game but for the most part there's no particular benefit in using them at the same time as your sword. It's generally better to switch between full melee & full magic on the fly than to try to use both at once.
Frost could've been good (slow & stamina damage) if it weren't for the tiny detail that the game takes place in fucking Skyrim and everything is at least resistant to frost if not outright immune.
I guess Paralysis might be one of the rare exceptions, but it's still a little expensive unless you have a strong Fortify Alteration enchantment. Also, once you've paralyzed your opponent you might as well pull out that second sword anyway.
Ward spells could be useful if you're fighting a spellcaster, but they drain your Magicka faster than Feral drains skater boys. So you either have to have excellent timing or 75%-100% Fortify Restoration for them to actually be useful.

Dragondorn is massive and awesome... Solsthaim has a lot of Morrowind feel. The Dunmer and their customs, different flora, the Skaal Nords of the Felsaad Coast in the northeast... New quests... And you get to meet Neloth again. Old prick has gotten ever more grumpy.

Dragonborn was fine, but I didn't really get a Morrowind feeling out of it. To me it instead felt like Skyrim wearing a cheap Morrowind mask. Which BTW is what I'm also expecting from Skywind, if I ever play it.
Neloth was an actual improvement though. In Morrowind he was that one lame Telvanni councilor I murdered justly punished because he paid me a measly 10 gold for the Robe of Drake's Pride. In Dragonborn on the other hand he is the cool arrogant wizard archetype. He also grew a beard.

I don't think Dragonborn was either massive or awesome  I loved the idea of Black Books though I'd rather have Divath Fyr than Neloth. I just killed him in morrowind for being a dick. Man I miss morrowind.

I like to replay games and I want to be able get a different experience each time if I make different choices. For that reason I want choice of race to have a visible impact on the gameplay experience, especially in the first half of the game.

Like in Elves/Humans/Beastfolk preffering their own, political affiliations affecting where you can/can't go? I want it too. I remember when I played as a Dunmer, looted an imperial Legion light armour at Helgen, had gone to Falkreath, went fetch Honningbrew for that silly Jarlboy... All the Stormcloaks gave at the sight of my character was: "I only hope you looted it off a body of an Imperial scout." It let me down. It was like if a Commisars Battalion on Eastern front encountered a stranded Waffen SS trooper and went: "Oh, but you are not a Nazi, eh?"

Fallout: New Vegas did it well with it's faction system which extended to faction uniforms. Put on Broterhood of Steel power armor near NCR sodliers and they'll start shooting. Likewise it's a bad idea to walk into a Legion outpost wearing NCR gear unless you're actually looking for a fight. Sadly Skyrim didn't incorporate that despite coming out more than a year later.
But that's uniforms, not race. For race I'd want a mix of NPC reaction and game mechanic's stuff. While every race should be able to pursue any skill, I want to see some sort of difference in how they start. In Skyrim a big burly Orc and a wimpy little Bosmer have the exact same carry weight, which is silly and makes no sense.

It's a bit contradictory, but not entirely irreconcilable. We could have race matter a lot in the early game, but not so much in the late.
Or perhaps races could have something that makes them good at specializing in a subset of a skill. For example Nords aren't as good at magic as Altmer, but they could be good at specializing in frost magic.
Or maybe specializing in one form of magic makes you vulnerable in the opposite. In which case a Nord's natural Frost Resistance could allow them to specialize in fire magic without being vulnerable to frost.
