The skill bonuses that the races grant have little effect by level 5 and become irrelevant by level 10. It's the special resistances and abilities that really set the races apart. I think mechanically Nords are the best race. They have a more useful elemental resistance than Dunmer and an extremely powerful daily power.
Overall my favourite TES race are Altmer, followed fairly closely by Dunmer. But for my first Skyrim character I picked Imperial. Mainly because I haven't really played them in the previous games, but the name Dragatus also sounds imperial. And since I was Imperial I automatically sided with the Empire in the civil war.
Speaking of the civil war, I haven't tried this mod out yet but it looks promising. http://www.nexusmods.com/skyrim/mods/37216/?

But the Dunmer aren't with the Thalmor, right? Why? Are Thalmor too soft for them?

Philosophical differences. Dunmer think Dunmer are the best and existence is good. Thalmor think Altmer are the best and the world needs to be unmade.

Of course. A minor difference in insignificant opinions makes for a lot of yelling.
If Dunmer think the existence is good even after the volcano blew up, I want what they're smokin'.

I meant the Dunmer think it's good that the world was created and they see Lorkhan as a positive figure. The Thalmor don't like it that the world was created and want to unmake it and go back to the state before creation.

The Thalmor want to erase Lorkhan from existence (as well as humans) and revert the world basically to the 'Time Before' and be Ehlnofey again (which I'm assuming weren't quite that different than the Aldmer).

I'm sorry if this is a bad question or thing to say, but are the Thalmor and pretty much all high elves souls the same as normal human souls? I mean, if we go by the basis that Black Soul Gems can drain their souls equally and are at the same level (Grand), making their souls just as black as normal human souls.
Of course, if we go by this method, we don't have to kill them the normal way. We could just kick them (not all Elves, only the nazi- er I mean Thalmor) to the Soul Cairn instead?

That is a very good question. Effectively, mer's souls are the same as those of man. All are Grand and fill Black Soulgems. As an avid Enchanting fanboy (lvl 100, perk tree close to full) I wholehartedly support sending the Thalmor to the Perfect Masters. Let them suffer long...

I am so much tempted to start over with something magical. Either Bretonian in heavy armor, or Dunmer mage. Dunno, tough decision, Vokun mask looks nice, but in robes I'd feel better around in Thieves guild - Dunmer for every quest, an elf to taunt the Thalmor.

I love increasing my enchanting skill too. Skyrim's home to such a large human population, so it makes it far easier to increase.
